Holy Guacamole

How do you guys like your #Guacamole? I like it to have a chunky texture that makes the #Avocado shine in all of its luxuriousness. Avocados are a great source of vitamins and minerals. They have more potassium than Bananas and they are loaded with Heart Healthy fatty acids that are associated with reduced inflammation and beneficial effect on genes linked to cancer. For me, it is one of my favorite guilt-free condiments.



To make this recipe you will need the following ingredients:


2 Ripe Avocados

1 Small Red Onion

1 Small bunch of Cilantro

2-3 Cloves of Roasted Garlic

1 Lime

Salt and Pepper

Grape Tomatoes (Optional)


Since Avocados oxidize (turn brown) relatively quickly, I choose to do most of the prep work before I add them to the mix.


Also, roasted garlic is my new obsession but you can use raw garlic as well.


The first step for me is to mash the roasted garlic into a paste. Add chopped onion and grape tomatoes to combine.


Next, cube the avocado and add it to the mix. Immediately squeeze the lime juice onto the avocados to stop the oxidation process so that they don't brown.


Now, add your chopped cilantro leaves and season the mixture with sea salt and freshly cracked black pepper.


Fold the ingredients together so that everything is combined but take care not to break up the beautiful chunks of Avocado. But you can make it as chunky or creamy as you would like.


Serve immediately.


If storing, using plastic wrap, cover the guacamole with direct contact in order to minimize oxidation.
