Chicken Alfredo with Broccoli

Method:  Stovetop 


1 lb. boneless, skinless chicken thighs (or breasts)

16 oz. rotini pasta

16 oz. frozen broccoli florets

2 cups heavy cream

2 cups grated parmesan cheese

2 Tbsp olive oil

½ cup butter, cut into large cubes

2 tsp kosher salt, split (1 tsp for chicken, 1 tsp for sauce)

2 tsp Italian seasoning, split (1 tsp for chicken, 1 tsp for sauce)

1 tsp garlic powder

1 tsp onion powder

1 small shallot

3 cloves fresh garlic, minced

Salt & Pepper to taste


Make the Noodles: Bring a large pot of salted water to a boil. Add the rotini pasta and follow the box directions to desired tenderness. Reserve 1 cup of pasta water, then drain well. Set aside.

Make the Chicken: Season the chicken thighs or breasts with salt, pepper, onion powder, garlic powder. Heat the olive oil in a large skillet over medium high heat. Once it is shimmering, swirl the pan to evenly distribute. Add the chicken and leave undisturbed for 3-4 minutes, until bottom is golden brown. Flip over and add 1 Tbsp of butter between them, pick up the pan and give a gentle swirl to distribute, reduce heat to medium and continue to cook another 5-7 minutes (or the internal temperature reaches 165 degrees F).

Transfer the chicken to a cutting board and let rest for 5 minutes. Cut into desired sized cubes or slices.

Make the Alfredo Sauce: In the same pan, over medium-low heat, add the remaining butter and cream; whisk until butter has melted.

Add in the minced garlic & shallot, onion powder, Italian seasoning, salt and pepper, whisk until combined and smooth. Add in the frozen broccoli florets.

Bring to a gentle simmer (do not boil) and cook 3-4 minutes, whisking constantly until it starts to thicken.

Stir in the parmesan cheese just until melted and the sauce is smooth. (If the sauce is too thick, add some of the reserved pasta water, a few tablespoons at a time, to thin it out).

Assemble: Remove sauce from heat and immediately add the pasta and chicken, toss until fully combined.

Serve: Portion into serving bowls. Garnish with fresh parsley and more parmesan cheese if desired.
